COOKING UP A BUSINESS CLUSTER: THE PERUVIAN GASTRONOMIC REVOLUTION, CONTINUED

ON A warm summer morning earlier this month, dozens of building workers were putting the finishing touches to the restoration of Casa Moreyra, a 17th-century colonial manor house in San Isidro, the business district of Lima, Peru’s capital. With an investment of $6m, Casa Moreyra is the new home of Astrid y Gastón, a restaurant ranked 14th in the world by Restaurant magazine. The more or less explicit goal of Gastón Acurio, its chef-proprietor, as he moves to these grand premises, is to turn Astrid y Gastón into the world’s leading restaurant.

CAPITAL OF FOOD LIMA: WHY GOURMANDS ARE BEATING A PATH TO PERU

One of the starters on the tasting menu at Central consists of delicate wedges of baked cornmeal with carob and honey, set beside a shot glass of liquefied corn “milk” blended with the sharp, citric juice of tumbo, a kind of passion fruit that was around in Peru long before the Spaniards arrived. The effect is refreshing, appetising and revelatory: a post-modern take on a staple that underlaid the great civilisations of the Andes as well as those of Mexico. It is a prelude to a menu that moves from intense mouthfuls of shellfish (limpets and sea snails as well as octopus, squid and crab) to shavings of obscure tubers and exotic fruits.

PERUVIAN CUSINE TODAY - FUSION FLAVORS AND SUPERFOODS

Last month I went back to my native Peru to visit the capitol, Lima, and explore the new food developments popping up. Since I wrote my two Peruvian superfoods books, Peruvian cuisine has taken off in the United States as well as around the world. Those popular effects are being felt in Peru as well, as Lima experiences a growing gastronomic explosion. On this recent journey, I wanted to see firsthand how chefs in these fantastic new restaurants of Lima are incorporating the superfoods I wrote about. I left with a clear sense that Peruvian food truly is the next great world cuisine — especially for people eating particularly healthy, or vegetarian or gluten-free.

The World Travel Awards (WTA) recognize and celebrate excellence in the tourism and travel industry worldwide. Nominations are made on the basis of well-supported recommendations made by professionals in the tourism industry. All winners are chosen through an online vote.
